Blueberry, Lemon and Coconut Cake


Five years have passed by since I started blogging. This blog has certainly kept me busy and distracted from all of life's stresses and hard times. Whenever I need an escape to a more peaceful and calmer world, I run to my little kitchen and start mixing, kneading, shaping and decorating. Time flies when you are doing something you love and you just enjoy every single moment!

To celebrate the blog's fifth year anniversary and all the beautiful moments it helped me to live, I decided to make a simple, easy, yet delicious cake with vibrant, fresh and summery flavors.

I´m not revealing any secret when I say that I´m obsessed with berries, all kind of summer berries, and I just love to eat them fresh or use them in my baked recipes. Blueberries were my choice for this cake and I married their flavor with that of lemons and coconuts. Trust me when I tell you, the result was amazing! Give this cake a try and you won't be sorry!


Now for the sponge you need for five 15 cm in diameter pans:
  • 5 eggs (at room temperature)
  • 150 g sugar
  • 150 g cake flour
  • dash of salt
  • 60 g melted butter
  • Zest of 2 big lemons
  • 1 tsp of kirsh (optional)
  • 50 g shredded coconut

Combine sugar, eggs, lemon zest, kirsh and salt and start whisking at low speed and then start increasing until you get to the highest one; beat for at least 5 minutes. The mixture should triple in volume, become very pale in color and with a cloud-like texture.

Add the flour and the coconut. Mix gently with a spatula until everything is incorporated. Finally, add the butter and mix slowly.

Pour the batter in the greased and lined pans.
If you don´t have 5 pans of the same size, pour the batter into 2 pans and then once baked slice your cakes. Be careful that the baking time will vary as you change the size of the pans.

Bake the cake in a preheated oven (160 C) for about 18-20 minutes. Leave the cakes to cool for 5 minutes in the pan then unmold and transfer them to a cooling rack.


For the blueberry sauce:
  • 250 g fresh or frozen blueberries
  • 125 g sugar
  • 1 tbsp lemon juice
  • half vanilla pod
Combine everything and cook the berries for about 15 min, on a very gentle heat. If the sauce is too runny, just scoop out some of the liquid, but reserve to serve with the cake.


For the frosting:
  • 150 g soft butter
  • 50 g cream cheese or mascarpone
  • 100 to 150 powder sugar
  • 1 tsp lemon juice
Combine butter, cheese and sugar and beat until  fluffy and pale, add the lemon juice and beat for few seconds.


To assemble:

Place a bit of the frosting on the cake board and then place the first layer. Pipe some of the frosting on the cake and spread with a spatula to cover the whole layer then pipe a small circle round the edge.In the middle of the cake layer add a tbsp or 2 of the blueberry sauce and then top with another layer. Repeat until you have covered all the layers,

Add some frosting on the top and edges, smooth with a scraper then decorate as you wish. I covered the top with fresh plump blueberries and multi-colored pansies and added some petals and flowers on the sides too.

Blueberry, White Chocolate and Cardamom Bondies!


One of the reasons why I love baking and cooking is that it allows me to experiment with new flavors and create my own version of popular sweets. I may lack courage in some aspects of my life, but when it comes to the kitchen, I just love to play around with different flavors. After all, if the result is not what I wanted, I can start again.

Brownies and blondies are 2 easy recipes that everyone can make whenever craving for something sweet. The base recipes call for only few ingredients and from there you can take the recipe the way you want by adding spices, fruits, nuts, chocolate chips or any other ingredients you could think of.



The blondies featured in this recipe combine between the sweetness of white chocolate and the tart flavor of the blueberries. These two ingredients alone would give you a wonderful flavor, however, I wanted to add a spice and I was not sure which one. I surely didn't want to use cinnamon as I have used quite a lot recently  even if it would have been a great combination. Instead, I went with cardamom, a deeply aromatic spice with a citrusy character that goes well with the tartness of blueberries and complements it. 



Though I had a feeling the combination of these three ingredients would work, but I wasn't sure as I had never tried it before. Now I am happy to say that the flavors are complementary, well balanced and utterly delicious. I couldn't have asked for more! 



Once baked, the blondies had such an enticing aroma that I had to refrain myself from eating the whole batch before I finished photographing them. 



And now let´s start with the recipe.

For this recipe you need (18 x 18 cm pan):
  • 100 g fresh (or frozen) blueberries 
  • 100 g butter
  • 120 g flour
  • 1/4 tsp of salt and another 1/4 tsp of baking soda
  • 1 egg
  • 100 brown sugar (for optimum results use dark brown sugar)
  • 1/4 to 1/2 tsp ground cardamom (depends on how strong you want the flavor)
  • 100 g white chocolate cut into small pieces 

Start by combining the flour with the salt, cardamom and baking soda.

Melt the butter in a sauce pan; you want to melt the butter and not to heat it, just warm it through. Add  the butter to the sugar  and whisk until well combined.

Now add the egg and mix well again.


Slowly fold in the flour. Finally, mix in in the chocolate and the blueberries.

Pour the batter in a pan (previously lined with baking paper), and bake them in a preheated oven (180 C; 350 F) for about 20 to 25 min, or until the edges and the top have a golden brown color.

Let the pan cool down. Remove the blondie and then cut into squares or rectangles. 

Enjoy the tasty spicy, tart, and sweet little squares of decadent blondies with coffee or on their own.

Deep Scarlet Red Summer Popsicles

As summer nears its end, its great to indulge in the special moments it gives us. What better way to celebrate vibrant summer flavors than to enjoy delicious deep red sweet and tart popsicles?

Like many of  you, I consider popsicles as the best companion for hot summer days. Forget about those commercial popsicles loaded with artificial flavors, colorings and are way too sugary; popsicles are easy to make at home and you control what goes in. The end result will definitely please you.

The popsicles featured in this recipe combine the robust, fruity, refreshing and fragrant flavors of lemon, blueberries and lavender.

To make 8 popsicles (70 ml approximately each) you need:
  • 300 g blueberries
  • 1 tbsp of sugar
  • 250 ml lemon juice
  • Simple syrup (recipe follows)

First put the blueberries in a pan with one tablespoon of sugar and leave it to heat over a low flame. When the berries ooze out their juice, remove them from the heat and set aside to cool. Using a hand-held blender (or a regular one) I mixed the blueberries until smooth. You can pass the mix through a sieve to remove the seeds and the peel if you are picky, but honestly I didn't bother as I like the added texture they give. 


For the syrup you need:
  • 100 ml water
  • 130 g sugar
  • 1 tsp lavender
  • 1 small slice of lemon peel and a squeeze of lemon juice

First heat the water, add the lavender and leave it to steep. Now combine the sugar with water, add the lemon peel and let it simmer on a low heat. When the syrup bubbles vigorously  add a squeeze of lemon juice and turn off the heat. Leave to cool a bit.



Now that you have all the ingredients ready, you just need to combine them and mix.

Pour the liquid in the popsicles molds and put in the freezer to set for not less than 4 hours.

Savor these delicious ice pops on a warm summer night, close your eyes and enjoy the explosion of summer flavors.
